A dish is only as good as what goes into it. Long before anything reaches the kitchen, our sourcing decisions are already shaping the final plate.

Buying by season, not by convenience

We try to cook what’s actually in season locally — drumstick and greens in the rains, mangoes in summer — rather than shipping the same vegetables year-round.

Shorter supply chains

Where we can, we buy directly from growers near our listed locations instead of routing through multiple middlemen — it keeps produce fresher and keeps more of what you pay closer to the people who grew it.

Why it shows up in the taste

Freshly harvested produce simply behaves differently in a kuzhambu or a poriyal — less water to cook off, more flavour to start with. It’s a small decision that quietly changes everything downstream.
